Ingredients
Homemade Ketchup
- 2 dozen of Cherry Tomatoes
- 1 Herloom tomato
- 40 g Balsamic Vinegar
- 2 Garlic cloves
- 4 Thyme sprigs
- 20 g Sugar
- Salt
- Black Pepper
Burger
- Bunch of Basil
- 1 dozen of Cherry Tomatoes
- Cheese (Parmigiano or Fresh Mozzarella Bufala
- 1 clove of Garlic
- 1lb Minced Beef (30% fat)
- Brioche Buns or Potato Buns
Instructions
For The Homemade Ketchup
- Cut the tomatoes (Cherries & Herloom) into small equal pieces
- Cut the garlic in big chunks
- In a pot, sweat the garlic pieces in a little bit of olive oil. Add the tomatoes and squash them with a spatula or fork.
- Add the remaining ingredient except salt and sugar.
- Cook for 10 minutes and then add the sugar, salt & black pepper
- Continue to cook for 5 more minutes if the mixture is not thick enough ( it should coat the back on a spoon)
- Taste, correct the seasoning with salt, sugar and black pepper
- Pour the the sauce into a blender and mix well. Then Pass it through a fine sieve.
- Store it in the refrigerator
For The Burger
- Cut the cherry tomatoes in fine slices and season it with salt and olive oil
- Finely dice the garlic
- Make Parmigiano Shavings or shred the MozZarella
- Lightly Butter the buns
- Make 100g (or bigger, you decide) burger patties. Rub a little bit of olive oil on top and season with salt (no pepper before cooking because it burns)
- Cook the patties in a smoking hot skillet.1 minute 30 seconds each side (Medium Rare)
- Remove the burger patties from the skillet and allow them to rest in some aluminium foil
- In the same skillet add the buttered buns and toast until gold brown ( Press the bun with a spatula while toasting.
Build The Burger
- Season the patty with salt and pepper
- Put ketchup on both buns
- Add 2 basil leaves
- Add the burger patties
- Put cherry tomatoes on top with some diced garlic
- Add some parmigianio shavings or Mozzarella
- Add more basil
- Cover with the bun
- Enjoy
