Homemade Ketchup

  • 2 dozen of Cherry Tomatoes
  • 1 Herloom tomato
  • 40 g Balsamic Vinegar
  • 2 Garlic cloves
  • 4 Thyme sprigs
  • 20 g Sugar
  • Salt
  • Black Pepper


  • Bunch of Basil
  • 1 dozen of Cherry Tomatoes
  • Cheese (Parmigiano or Fresh Mozzarella Bufala
  • 1 clove of Garlic
  • 1lb Minced Beef (30% fat)
  • Brioche Buns or Potato Buns


For The Homemade Ketchup

  1. Cut the tomatoes (Cherries & Herloom) into small equal pieces
  2. Cut the garlic in big chunks
  3. In a pot, sweat the garlic pieces in a little bit of olive oil. Add the tomatoes and squash them with a spatula or fork.
  4. Add the remaining ingredient except salt and sugar.
  5. Cook for 10 minutes and then add the sugar, salt & black pepper
  6. Continue to cook for 5 more minutes if the mixture is not thick enough ( it should coat the back on a spoon)
  7. Taste, correct the seasoning with salt, sugar and black pepper
  8. Pour the the sauce into a blender and mix well. Then Pass it through a fine sieve.
  9. Store it in the refrigerator

For The Burger

  1. Cut the cherry tomatoes in fine slices and season it with salt and olive oil
  2. Finely dice the garlic
  3. Make Parmigiano Shavings or shred the MozZarella
  4. Lightly Butter the buns
  5. Make 100g (or bigger, you decide) burger patties. Rub a little bit of olive oil on top and season with salt (no pepper before cooking because it burns)
  6. Cook the patties in a smoking hot skillet.1 minute 30 seconds each side (Medium Rare)
  7. Remove the burger patties from the skillet and allow them to rest in some aluminium foil
  8. In the same skillet add the buttered buns and toast until gold brown ( Press the bun with a spatula while toasting.

Build The Burger

  1. Season the patty with salt and pepper
  2. Put ketchup on both buns
  3. Add 2 basil leaves
  4. Add the burger patties
  5. Put cherry tomatoes on top with some diced garlic
  6. Add some parmigianio shavings or Mozzarella
  7. Add more basil
  8. Cover with the bun
  9. Enjoy
